- Tasting: take out of the fridge 30 minutes before eating. With good olive oil from Tuscany, radicchio or dried tomatoes, Pecorino is a fine snack or irresistible addition to a glass of chianti.
- Storage: unwrap cheese in tight foil, wrap well in paper or foil with air holes, and place in a non-airtight container in the refrigerator. For frequently, an equally tipped, non-airtight cheese cover is ideal for a few days with cellar coolers.
