- For best results, the following procedure is recommended: Let the fondant reach ambient temperature. Knead the sugar paste until it is smooth and elastic. Dust the work surface with a little icing sugar and roll out the fondant evenly with a rolling pin (2-3 mm thick). Turn the fondant by a quarter so it doesn't stick. If small cracks are still visible on the edges, knead again until the edges are smooth when rolled out. The rolled fondant is then ready to use
